What is gluten?

Gluten is a protein found is some varieties of cereals. Gluten is also considered as a glue that binds the grain that has been milled into flour. Gluten has another typical characteristic: it makes thick bread and pizza dough springy. Therefore many food items contain gluten.

What is celiac disease?

Coeliac disease is an autoimmune disorder caused by gluten, a protein found in wheat, rye and barley.
In a person with coeliac disease, the immune system perceives gluten in the gut as a "foreign body" and reacts by causing damage to the lining of the small intestine. As a result, your body cannot absorb nutrients well and you may become deficient in certain vitamins or minerals.

Symptoms

Coeliac disease can be associated with a variety of symptoms. Typical symptoms include diarrhoea, weight loss, muscle loss, abdominal pain, bloating and poor growth in children. Other symptoms may include iron deficiency anaemia, fatigue, osteoporosis and other vitamin and mineral deficiencies. Coeliac disease is more common in people with other autoimmune diseases such as type 1 diabetes, thyroid disorders or food intolerances (e.g. lactose intolerance, fructose malabsorption). If these symptoms occur and coeliac disease is suspected, you should consult your doctor.

It is important NOT to exclude gluten from your diet until advised to do so by a healthcare professional.

What can be eaten?

It is allowed to consume meat, fish, eggs, potatoes, rice, corn, millet, nuts, fruit and vegetable, milk, yoghurt, cheese, butter, honey, marmalade, fruit juice, lemonade, tea and special gluten free products.

Non-celiac gluten sensitivity

OTHER FORM OF GLUTEN INTOLERANCE

Non-celiac gluten sensitivity is another form of gluten intolerance. People with non-celiac gluten sensitivity experience symptoms similar to those of celiac disease after consuming gluten, but do not meet the criteria for a diagnosis of celiac disease. This diagnosis is made by excluding celiac disease and wheat allergy, as well as improvement of symptoms with a gluten-free diet.
